Good, hearty Banana oatmeal Pancake. They are incredibly tender, moist, with a lot of flavors and great texture. A healthy and terrific tasting way to start the day!

  • 2 cups old fashioned oats
  • 2 Tsp baking powder
  • 1 Egg White
  • 2 Eggs
  • 1/4 Tsp Salt
  • 1 cup milk
  • 1 Banana large ripe Banana
  • 2 Tbsp Maple syrup
  • 1 Tsp vanilla extract
  • 2 Tbsp coconut oil for frying


  • In a blender, combine the oats, baking powder, salt, banana, Eggs, Egg white, Vanilla, maple syrup, and milk. Blend until smooth.
  • Pour the batter inside a bowl and set aside.
  • Heat skillet over medium and lightly brush the coconut oil on the skillet.
  • Scoop the batter onto the skillet using approximately 1/4 cupful for each pancake and cook for about 2 to 3 minutes or until the batter starts to form bubbles on the surface.
  • Flip the pancake to the other side and cook for another 1 to 2 minutes.
