Stick Meat recipe - How to make the Nigerian Stick Meat
Stick Meat is a very delicious and colorful Nigerian Snack. The color and the smell triggers the taste buds. It's often served in Nigerian parties and it's also a street food in some parts of Nigeria. Here is how it's made.

Ingredients
For the Meat:
2lbBeef
3Bell peppers or Peppers of your choice
1/2Onion bulbLarge
1/2TeaspoonCurry powder
1/2TeaspoonThyme
2Bouillon Cubes
1/4cupof Water
Salt to taste
Lots of Tooth picks
For the Sauce:
1/2CupStarter Sauce
1/4CupBeef Stock
1/2TeaspoonSmoked Paprika
Salt to taste
1/2 OnionHalf of a bulb of Diced
5TablespoonsVegetable Oil
Instructions
For the Meat:
Cut the Meat into cube-like pieces
Wash the meat
Add the Onion
Season with Curry powder,Thyme,Bouillon Cubes and Salt
Add water, stir and allow to cook on a medium to high heat
boil between 20 to 25 minutes
Drain water from meat (if it still has some retained Water)
Spread on a baking pan and bake at 350°F for 20 minutes
For the Sauce:
Measure out 5 Tablespoon of Oil in a Pan
Add the Starter sauce (Nigerian Stew base)
Add the spices, stir and add the stock
Allow the sauce to thicken up to your taste
Add the Beef and stir (Be sure to coat all the beef pieces with the Sauce)
Allow to simmer for few minutes
Take down from heat and allow to cool
The final step is to thread the beef and Peppers into the Tooth pick

When making the Nigerian stick meat it is very important to use the soft part of Meat cut for this stick meat since it involves frying/oven drying, you don't want to hurt your jaw in the process of chewing.
