Sweet Fried Bread - Mandazi (Mahamri)

Mandazi which is also called Mahamri or Mamri is an East African deep fried sweet Bread. This soft textured snack is related to the Doughnut family, it has that soft texture of Bread when done right and it's Soo... tasty.

Ingredients

  • 3 to 3½ cups all purpose flour
  • 1/2 cup sugar
  • 1/4 cup coconut flakes optional
  • 2 teaspoons yeast
  • 1 teaspoon cardamom powder substitute with Nutmeg or Cinnamon
  • 1 Cup coconut milk
  • 1 egg
  • ½ teaspoon salt

Instructions

  • In a small bowl, dissolve yeast and 1 tablespoon of sugar in the warm coconut milk. Let sit until foamy - about 5 minutes.
  • In a separate large bowl, mix together the all-purpose flour, coconut flakes, cardamom powder, sugar, and salt. Create a well at the center and pour in the proofed yeast, coconut milk, and egg. Mix together until a dough is formed.
  • Transfer the dough to a lightly floured work surface and knead until it becomes smooth and elastic. Put the dough into a large oiled bowl, cover it up and leave it to rise for 45 minutes to 1 hour in a warm place.
  • Punch down the air from the dough and transfer it to a floured work surface. Divide it into 8 hand-sized pieces and form balls.
  • Roll out each piece into about a quarter-inch thick circle then divide each circle into 8 triangular pieces and leave to rest again for about 5 to 10 minutes.
  • Preheat some cooking oil to about 350°F (180˚C). Working in batches, gently place the mandazi in the hot oil (do not overcrowd) and fry on both sides. About 2-3 minutes per side until the mandazi becomes golden brown.
  • Remove from heat, drain on a paper towel and enjoy!
