1medium-sized head cauliflower or 4 cups pre-made cauliflower rice
2tablespoonsvegetable oil
2 large eggs
1small onionfinely chopped

2green onionsthinly sliced
½cupchicken breastsrotisserie or baked (cut into 1 inch thickness)
3tablespoonssoy sauce or tamari for a gluten-free option

Instructions
If using a whole head of cauliflower, remove the core and chop it into small florets. Use a food processor to pulse the florets into rice-sized pieces. Skip this step if you have pre-made cauliflower rice.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Crack the eggs into the skillet, scramble, and cook until fully set. Transfer the eggs to a plate and set aside.
In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the chopped onion and sauté for 2-3 minutes until softened. Add the minced garlic and grated ginger, and cook for an additional 1 minute, stirring constantly to prevent burning.
Stir in the mixed vegetables. Cook for 3-5 minutes or until they are tender-crisp.
Increase the heat to high, then add the cauliflower rice and chopped chicken to the skillet. Stir-fry everything together for 5-6 minutes until the cauliflower rice is slightly tender.
Pour in the soy sauce (or tamari) and sesame oil—season with salt and pepper to taste. Add the scrambled eggs back into the skillet and stir everything to combine. Cook for an additional 1-2 minutes until heated through.
Remove the skillet from the heat, then sprinkle the sliced green onions over the top. Serve immediately!
