12ozfettuccineor pasta of your choice
¼teaspoonItalian seasoning
¼teaspoonred pepper flakesoptional
¾cupgrated parmesan
Salt and pepper to taste
2tablespoonsparsleyplus more for garnish, chopped
Instructions
Chicken:
Season chicken with thyme, onion powder, garlic powder, salt, and pepper to taste.
Heat the butter and olive oil over medium heat in a large pot or deep skillet.
Add the seasoned chicken and cook until lightly browned and cooked through about 5-7 minutes. Remove the chicken from the pot and set aside.
Pasta:
Lower the pan's heat to medium and add the butter and olive oil.
Add the finely chopped onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.
Add broth, cream, and pasta. Bring the mixture to a boil, stiring the pasta around every 30 seconds to prevent it from sticking together then reduce the heat to medium-low and let it simmer for about 9 - 10 minutes, stirring occasionally.
Once the pasta is cooked, add the cooked chicken back to the pot, along with the grated Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Stir well to combine. Lower the heat to medium-low and leave to simmer for a minute or 2 until the cheese is melted and the chicken is heated through.
. If the sauce is too thick, add a splash of broth or cream a little at a time until desired consistency is desired. Taste and adjust the seasoning if necessary, adding more salt and pepper if needed.
Remove the pot from the heat, garnish with a sprinkle of parsley, and serve while hot. Enjoy!
