Ingredients

  • ½ cup fonio washed
  • 1 cup water
  • 1 cup milk any type: dairy or plant-based
  • pinch salt
  • pinch cinnamon
  • honey or maple syrup or any other sweetener of choice

Instructions

  • Toast the Fonio (optional but recommended): Place a dry pan over medium heat and add the fonio. Toast for 3 to 5 minutes, stirring frequently, until it smells lightly nutty and toasty. Be careful not to let it burn. This step boosts the flavor.
  • Pour in the water and stir well. Cover the pot and let it sit for about 1 minute to allow the fonio to absorb the liquid.
  • Add the milk and stir continuously. Let the mixture cook until the fonio becomes soft, creamy, and porridge-like. About 5 to 8 minutes.
  • Add a pinch of salt and cinnamon. Stir until everything is well combined.
  • If the porridge is thicker than you like, add more water or milk a little at a time until you reach your desired texture.
  • Serve with your favorite toppings and sweeten with honey or any other sweetener of choice.
