Instructions
Toast the Fonio (optional but recommended): Place a dry pan over medium heat and add the fonio. Toast for 3 to 5 minutes, stirring frequently, until it smells lightly nutty and toasty. Be careful not to let it burn. This step boosts the flavor.
Pour in the water and stir well. Cover the pot and let it sit for about 1 minute to allow the fonio to absorb the liquid.
Add the milk and stir continuously. Let the mixture cook until the fonio becomes soft, creamy, and porridge-like. About 5 to 8 minutes.
Add a pinch of salt and cinnamon. Stir until everything is well combined.
If the porridge is thicker than you like, add more water or milk a little at a time until you reach your desired texture.
