Ingredients

  • 3 cups almonds Raw
  • 1-2 tablespoons of honey or maple syrup if vegan
  • Pinch sea salt optional
  • 1-2 tablespoons oil neutral oil like sunflower or grapeseed

Instructions

  • Preheat your oven to 350°F (175°C). Lay the almonds out on a baking tray and roast for about 10 minutes or until slightly browned. Let the almonds cool.
  • Place the almonds in a high-speed food processor or blender. Blend on low speed for about 10-15 minutes or until a crumbly paste forms.
  • Add the honey (if using) and salt to the blender.
  • Continue to blend on low, stopping to scrape down the sides of the blender every few minutes. This process will take patience; the almonds will first become a fine meal, then start to stick together, then eventually become buttery and creamy.
  • If the mixture is not forming a smooth, creamy butter after ~15 minutes of blending, add the oil (you may not need it). Start with just half a tablespoon, blend, and add more if needed.
  • Taste your almond butter. If you want it sweeter, add more honey or maple syrup. If you want it saltier, add a pinch more salt. Blend to incorporate any additions.
  • Once the almond butter is creamy and smooth, transfer it to an airtight container. It can be stored at room temperature for a week, in the fridge for up to a month, or in the freezer for several months.

  • Use fresh, high-quality almonds for optimal results. Whether raw or roasted, ensure that they are not rancid.
