Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
In a shallow bowl, mix together the flour, baking powder, garlic powder, paprika, salt, and black pepper.
In another bowl, whisk together the eggs, hot sauce, and water until well combined.
Place the panko breadcrumbs in a third bowl.
Dredge each chicken tender in the flour mixture (shake off excess), then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing gently so it sticks well.
Place the coated tenders on the prepared baking sheet in a single layer. Lightly spray the tops with cooking spray.
Bake for 18–22 minutes, flipping halfway through, until the chicken is cooked through and the coating is golden and crispy.
Sprinkle with chopped parsley and serve hot.
