3cupscherry tomatoeshalved or quartered
½cupfresh basil leaveschopped
¼cupred onionfinely chopped - optional
2tablespoonsbalsamic vinegar
Salt and black pepperto taste
Balsamic glazefor drizzling (optional)
1loafcrusty Italian breadsliced into ½-inch thick pieces
¼cupextra-virgin olive oilplus more for brushing bread
Instructions
Preheat your oven to 400°F (200°C) or preheat a grill to medium-high heat.
In a large bowl, combine the cherry tomatoes, basil, red onion (if using), olive oil, and balsamic vinegar. Season with salt and freshly ground black pepper, to taste. Stir well to combine and set aside to marinate for 10-15 minutes.
While the tomato mixture is marinating, brush both sides of the bread slices with olive oil and place them on a baking sheet. Bake in the preheated oven for 5-7 minutes, or until the bread is golden and crispy. Alternatively, you can grill the bread for 2-3 minutes per side until grill marks appear and the bread is crispy.
Remove the bread from the oven or grill and let it cool slightly. If desired, you can rub a raw garlic clove on the surface of the bread for extra flavor.
Spoon the marinated tomato mixture onto each slice of bread, dividing it evenly.
Drizzle with balsamic glaze, if desired. Serve immediately and enjoy!
