2cupsall-purpose flour
4teaspoonbaking powder
¼teaspoonbaking soda
¼cupsugaror sweetener of choice
½teaspoonsalt
1 ¾cupmilk
1egg
¼cupbuttermelted and cooled a little, plus a little more for cooking
2teaspoonvanilla extract
Instructions
Whisk together the flour, baking powder, baking soda, sugar, and salt into a large mixing bowl.
Make a well at the center and add the milk, egg, melted butter, and vanilla extract. Whisk them together starting at the center, slowly incorporating the dry ingredients while mixing.
If the batter becomes too thick, add an extra milk a tablespoon at a time until it becomes a creamy consistency. Set the batter aside and let it rest for a few minutes.
Heat a nonstick pan over medium-high heat and lightly grease it with a little bit of butter. Ladle ¼ cup of batter into the pan and spread it around to make a round shape with the use of the ladle.
Cook for 2 minutes or when the sides turn golden brown and the surface begins to form bubbles, flip with a spatula and cook the other side until the bottom turns golden. Repeat with the rest of the batter.
Transfer pancakes to a plate and serve with your favorite syrup or honey, chopped fruits, bacon, or any other breakfast item you want.
