Fonio stir fry is a delicious and versatile dish made with Fonio, also known as Acha in Nigeria, Iburura, or Hungry Man's Rice, and a combination of various colorful vegetables and proteins of your choice.

Ingredients
Fonio
1cupFonio
1-½cupschicken stockor beef stock
1tablespoonoil
Stir fry
2tablespoonoil
½cupdiced onion
3clovesgarlicminced
2tspsgrated ginger
¾cupbell peppersdiced
¼cupsweet corn
2teaspoonpaprika
2teaspooncurry powder
2teaspoonthyme
2teaspoonbouillon powder
red chili flakes to taste
salt and pepper to taste
Instructions
Add your sorted and cleaned fonio to a pot over medium heat. Stir it around and let it toast for about 3 to 5 minutes.
Pour in chicken or beef stock, and give it a good mix.
Cover the pot and let it cook on high heat for a minute. Then turn off the heat and let the fonio absorb the remaining liquid for 5 minutes. Take off the lid and fluff up the grains.
In a clean pot, add some cooking oil over medium heat. Add diced onions, and cook until soft. About 3 minutes
Add the minced garlic, grated ginger, and red chili flakes. Cook for another 30 seconds.
Add the mixed bell peppers and sweet corn, then season with curry powder, paprika, thyme, bouillon powder, salt, and black pepper to taste. Mix well and cook until the veggies are heated through.
Stir in the cooked fonio. Mix until each grain is evenly coated with the seasoning.
Serve hot with meat, fish, or any other protein of choice. Better still, make it a meatless Monday meal.
