Ingredients

  • 6 tablespoon oil
  • 2 lb beef lamb or chicken [cut into 2-inch cubes]
  • 1 teaspoon dried thyme
  • 2 teaspoon chicken bouillon
  • 1 teaspoon cayenne pepper
  • 1 teaspoon Salt and pepper to taste
  • 3 cloves garlic minced or very finely chopped
  • ½ teaspoon ginger freshly grated
  • 1 medium onion sliced
  • 4 ripe tomatoes diced into about ½ inch cubes
  • 2 tbsps tomato paste
  • 3 lb russet potatoes or Irish potatoes [peeled and cut into 2-inch cubes]
  • 2 cups chicken broth
  • 1 red bell pepper seeds removed and sliced into strips
  • 1 green bell pepper seeds removed and sliced into strips

Instructions

  • Heat the oil in a pan; once hot (not smoking), add the beef and seasonings - thyme, chicken bouillon, cayenne pepper, and salt and pepper. Continue stirring in the oil until the seasonings are well distributed, and the meat is well browned.
  • Stir in the onions, tomatoes, and tomato paste. Add the garlic and ginger, cover, and cook on medium heat for about 5 minutes, until the tomatoes break down and release their juice.
  • Add the potatoes and the chicken broth, stir, cover, and cook for about 20 minutes until the potatoes are tender enough to cut easily with a spoon.
  • Add the bell peppers about 3-4 minutes before the end of the cooking time and continue to cook until they soften but still have a bite to them.
  • You can serve it as a complete meal or serve it with a side of crusty bread.
