Ingredients
6tablespoonoil
2lbbeeflamb or chicken [cut into 2-inch cubes]
1teaspoondried thyme
2teaspoonchicken bouillon
1teaspooncayenne pepper
1teaspoonSalt and pepperto taste
3clovesgarlic minced or very finely chopped
½teaspoongingerfreshly grated
1medium onionsliced
4ripe tomatoes diced into about ½ inch cubes
2tbspstomato paste
3lbrusset potatoesor Irish potatoes [peeled and cut into 2-inch cubes]
2cupschicken broth
1red bell pepperseeds removed and sliced into strips
1green bell pepperseeds removed and sliced into strips
Heat the oil in a pan; once hot (not smoking), add the beef and seasonings - thyme, chicken bouillon, cayenne pepper, and salt and pepper. Continue stirring in the oil until the seasonings are well distributed, and the meat is well browned.
Stir in the onions, tomatoes, and tomato paste. Add the garlic and ginger, cover, and cook on medium heat for about 5 minutes, until the tomatoes break down and release their juice.
Add the potatoes and the chicken broth, stir, cover, and cook for about 20 minutes until the potatoes are tender enough to cut easily with a spoon.
Add the bell peppers about 3-4 minutes before the end of the cooking time and continue to cook until they soften but still have a bite to them.
You can serve it as a complete meal or serve it with a side of crusty bread.
