Ingredients

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 carrots chopped
  • 3 cloves garlic finely minced
  • 2 celery stalks chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 8 cups chicken broth
  • salt and pepper to taste
  • 1 lemon juiced and zested
  • 1 cup orzo
  • 2 boneless, skinless chicken breasts cooked and shredded

Instructions

  • Heat the olive oil in a large soup pot over medium heat. Add the diced onion, chopped carrots, and celery, stirring until the vegetables have softened, about 5-7 minutes. Add the garlic, oregano, and thyme, stirring for another minute.
