This delicious and sweet oatmeal banana bread is the perfect way to start the day. Warm, soft, and perfect with a cup of coffee— you'll be wondering where this recipe has been your whole life.
Next, combine the oat flour, salt, baking powder, and baking soda in one bowl.
Then, grab another bowl and mash down three bananas. Stir in the sugar, eggs, vanilla extract, melted coconut oil, and cinnamon.
Now add your wet ingredients into your dry. Don't overmix just mix till combined.
Stir in the milk and leave the mixture to sit for five minutes. This helps the oats absorb all the liquid before baking.
Then, grab a loaf pan and line it with parchment paper. Place the mixture in the pan, then place the pan in the oven for 50 to 55 minutes at 350 degrees. Ideally, you will let your bread cool for a few hours before slicing through.
That's it! Told you it was simple.
Notes
I blended my rolled oats myself. This is very easy to make and I have a step-by-step direction on how to make it here.
The baking time is 50 to 60 minutes but I will suggest checking the bread anywhere from 45 minutes just to ensure that the bread does not over bake - to check for the doneness, simply insert a skewer into the middle of the cake. If it comes out fairly clean, then the bread is done, if otherwise, bake for a little longer.
