Oven-Roasted Broccoli Recipe

Learn how to make crispy oven-roasted broccoli with golden caramelized edges, tender stems, garlic, lemon, and Parmesan. An easy healthy side dish ready in 20 minutes.

Ingredients

  • lb broccoli cut into florets (about 4 cups)
  • 3 tablespoon olive oil
  • salt to taste
  • black Pepper to taste
  • 2 cloves garlic minced
  • 1 teaspoon lemon zest
  • 2 tablespoon fresh lemon juice
  • ¼ cup grated parmesan Cheese optional

Instructions

  • Set your oven to 425°F (220°C) and allow it to preheat while you prepare the ingredients.
  • Wash and cut the broccoli into evenly sized florets. Make sure to thoroughly dry the florets before proceeding to the next step.
  • In a large mixing bowl, toss the broccoli florets with olive oil, minced garlic, kosher salt, and freshly ground black pepper. Make sure all the florets are evenly coated with the seasoning.
  • Spread the seasoned broccoli florets on a large baking sheet lined with parchment paper. Make sure to arrange them in a single layer for even roasting.
  • Place the baking sheet in the preheated oven and roast for 20 minutes, or until the broccoli florets become tender and their edges are golden brown. Toss halfway through roasting to ensure even cooking.
  • Remove the roasted broccoli from the oven and transfer it to a serving dish. Immediately, toss it with fresh lemon zest, lemon juice, and optional grated Parmesan cheese.
  • Serve hot alongside your choice of main courses.

Notes

  1. Dry the Broccoli Very Well. This is the most important tip. If the broccoli is wet, the moisture has to evaporate before browning can happen. By the time that happens, the broccoli may already be too soft.
  2. Do Not Crowd the Pan. Crowded broccoli steams. Spread the florets in a single layer, leaving some space between them.
  3. Use a Hot Oven. A fully preheated oven helps the broccoli roast quickly and evenly. If the oven is still heating up, the broccoli will release moisture slowly and may turn soft.
  4. Cut Even Pieces: Evenly sized florets cook at the same rate. If some pieces are too small and others are too large, the small ones may burn before the larger ones are tender.
