1medium-sized butternut squasharound 3 pounds
3tablespoonsolive oil
2clovesgarlicminced
Salt and pepperto taste
½tablespoonchopped fresh rosemaryor thyme
2 tablespoons maple syrup or honey (optional)
Instructions
Preheat your oven to 400°F. Line a baking sheet with parchment paper.
Peel the butternut squash with a potato peeler. Cut the squash in half lengthwise and scoop out the seeds with a spoon. Cut the squash into 1-inch cubes.
Place the cubed butternut squash into a large mixing bowl. Add the olive oil, minced garlic, rosemary, salt, and pepper over the squash and toss to coat evenly.
Transfer the seasoned butternut squash onto the lined baking sheet, spreading them out in a single layer.
