Ingredients

  • 2 cups all-purpose flour
  • 1 to 1¼ cups water as needed
  • 2 teaspoons yeast
  • ¼ to ½ cup sugar adjust to taste
  • 1 teaspoon nutmeg optional
  • ½ teaspoon salt
  • 1 small onion
  • 1 habanero pepper or cayenne
  • oil enough for deep frying

Instructions

  • Blend the onion and habanero pepper together until smooth. Set aside.
  • In a large bowl, combine the flour, sugar, yeast, salt, and nutmeg (if using). Mix well.
  • Add the blended onion and habanero mixture to the dry ingredients.
  • Gradually add water while mixing until you get a smooth, thick, lump-free batter.
  • Cover the bowl with plastic wrap or a tight lid and let the batter rise for 45 minutes to 1 hour, or until doubled or nearly tripled in size.
  • Heat oil in a deep pan to about 350°F (175°C).
  • Scoop small portions of the batter (about the size of a table tennis ball) and carefully drop into the hot oil.
  • Fry until golden brown on all sides, turning as needed.
  • Remove and drain on paper towels.
  • Serve hot or warm with your favorite drink.

Notes

Oil Usage: About ¼ to ⅓ cup of oil is absorbed during frying, although more oil is required for deep frying. The nutrion facts is calculated based on this.
