Ingredients

  • 1 lb beef stew meat cut into small pieces
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots peeled and diced
  • 2 celery stalks diced
  • 1 bell pepper diced
  • 2 cups chopped potatoes
  • 1 cup chopped green beans
  • 1 can diced tomatoes 15 oz
  • 4 cups beef broth
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cups chopped kale or spinach

Instructions

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the beef stew cut in small pieces and cook until browned.
  • Remove the meat from the pot and set it aside.
  • In the same pot, add onion, garlic, carrots, celery, and bell pepper. Sauté these for 5 minutes until the onions become translucent.
  • Add the potatoes, green beans, diced tomatoes, and beef back into the pot.
  • Now pour in the beef broth and add the dried thyme, salt, and black pepper.
  • Reduce the heat to low, cover the pot, and let it simmer for about 1.5 hours.
  • After simmering, add the chopped kale/spinach and cook for another 15-20 minutes.
