Banana Oatmeal Waffles

This is a quick and easy breakfast or brunch idea. It's nice and soft on the inside; it's hearty and very delicious.

Ingredients

  • 1 cup milk
  • 2 eggs
  • 2 bananas
  • 1 tablespoon coconut oil
  • 4 tablespoons honey
  • 1 tablespoon vanilla extract
  • cups oatmeal
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions

  • Add all the ingredients inside the blender and blend until smooth. See note 1 below). Leave the batter to rest for about a minute before cooking so that the oat can have enough time to absorb the liquid.
  • Preheat the waffle griddle, and brush the griddle with some oil or simply spray with a non-stick cooking spray.
  • Pour the batter onto the hot waffle iron and cook until golden brown. Serve hot with honey, maple, syrup, or favorite fruits.

Notes

Notes:
  • Start with the liquid and soft ingredients first. This will help to get the blending process started with ease.
  • If you want to make these waffles dairy-free, you can use soy milk, almond milk, or coconut milk. 
  •  Using very ripe bananas is the key to giving these waffles an abundant flavor. 
  • This recipe will yield about 3 large or 4 medium waffles, depending on your griddle size.
