1 lb Boneless Chicken Thigh Cut into little pieces 1 lb Baby Spinach 1 Onion Diced 1 Cup Tomato Sauce 1 teaspoon Salt 1 tablespoon Oil
Heat the Oil in a Pan, over high heat until shimmering. Add the Onions and Saute until it's translucent
Add the Chicken, season with Salt and black pepper and stir-fry until it's browned
Pour in the Tomato sauce and cook for another 5 minutes
Add the Spinach in handfuls and cook until it's wilted - about 1 or 2 minutes
Remove from heat immediately.
Serve over Rice, Yam, Couscous, Plantains, Quinoa.......Enjoy!
