Classic Summer Tomato Cucumber Salad

This easy-to-make Greek salad is so delicious, easy to prepare, refreshing, and drool-worthy! Everyone who tries this salad will love it!

Ingredients

  • 1 lb cherry tomatoes optional – red and yellow [sliced in halves]
  • ½ red onion medium size [thinly sliced into half-moon]
  • 1 cucumber medium size [cubed]
  • 4 tablespoons fresh parsley
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • salt and black pepper to taste

Instructions

  • Combine the tomatoes, onions, and cucumber. Add the olive oil, red wine vinegar, salt, and pepper. Mix well.

Notes

  • Leave it in the refrigerator to marinate overnight if you have the time to make this cucumber salad the day before. The flavors will have time to meld, and you’ll be pleasantly surprised by the extra flavor burst you get.
  • I like my salad this way but for those with a bit of sweet tooth, feel free to add about a half teaspoon of sugar for that hint of sweetness.
  • Please note that a little onion goes a long way. Too much will overwhelm the salad, and if you don’t like the pungency of the onions, feel free to soak the onions in cold water for 10 minutes before adding them to the salad.
  • Lettuce can also be added to the salad. It will add more texture to the salad. However, you will need to finish it up the same day because the lettuce will wilt and get soggy the next day.
