Ingredients

For the sauce

  • 2 habanero pepper use 1 or ½ for less heat
  • 2 large plum Tomatoes
  • 1 onion divided
  • 1- inch ginger root
  • 3 cloves garlic

For the Chicken

  • 2 lb chicken thighs
  • 2 teaspoon paprika
  • cayenne pepper to taste
  • salt and pepper to taste

For the peanut stew

  • 4-6 tablespoon oil
  • remaining half onion sliced
  • 1 tablespoon tomato paste
  • 2 bay leaves
  • 1 teaspoon thyme
  • 2 teaspoon bouillon powder or 2 cubes
  • ½ cup Peanut butter unsweetened
  • salt and pepper to taste
  • 2 to 3 cups chicken stock
  • handful spinach optional

Instructions

  • Add the tomatoes, half the onion, habanero pepper, ginger, and garlic to a blender. Blend until smooth and set aside.
  • Season chicken with paprika, salt, and black pepper. Set aside
  • Heat the oil in a large pot over medium-high heat. Fry the chicken for about 5 minutes on each side until well browned. Remove and set aside.
  • Add the sliced onion to the same oil and cook over medium heat for 3 to 5 minutes until soft and lightly golden.
  • Stir in the blended sauce, tomato paste, and bay leaves and cook for about 6 to 10 minutes or until the sauce is well reduced and the raw tomato taste is gone.
  • Add the peanut paste and chicken stock, and stir well until the peanut butter dissolves. Season with salt, pepper, seasoning powder, and thyme.
  • Return the chicken to the sauce and cook over medium-low heat for another 15 to 20 minutes, or until the chicken is cooked through and the soup has thickened to your liking.
  • Stir in the spinach in the last 2 minutes and allow to wilt. Taste for seasoning and serve hot.
