Ingredients

  • ½ cup flour
  • ¼ cup yellow cornmeal
  • 15 ounces canned salmon (drained)
  • 1 red bell pepper (finely chopped)
  • ½ cup onion (finely diced)
  • 1 large egg (beaten)
  • ¼ cup mayonnaise or yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon  cayenne pepper (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup parsley (chopped)
  • oil (for frying)

Instructions

  • Drain water completely from the salmon and debone if you choose.
  • Add flour and cornmeal to a large bowl and mix. Then add the salmon, bell peppers, onion, egg, mayonnaise, lemon juice, dijon mustard, Worcestershire sauce, garlic powder, paprika, cayenne pepper, parsley, and egg.
  • Season with salt, and pepper to taste. Then mix until everything is just combined (don't over mix) and shape into about 6 to 8 patties.
  • Heat oil over medium heat in a large skillet. Add the patties in batches and cook for 2 to 3 minutes on each side or until golden brown on the outside and cooked through inside.
  • Drain on a paper towel and serve immediately with your favorite dipping sauce.
