Instant Pot Curry Goat

Ingredients

  • 3 lb Goat meat
  • 2 tablespoons curry powder
  • 1 large onion
  • 3 stalks green onion
  • 3 tablespoons coconut oil
  • 2 teaspoons grated ginger
  • 4 cloves garlic
  • 3 sprigs fresh thyme
  • 1 scotch bonnet pepper
  • 1 cup beef stock or chicken stock
  • 1 tablespoon tomato paste
  • ¼ teaspoon allspice
  • 1 teaspoon bouillon powder or ½ teaspoon all-purpose seasoning
  • 3 medium russet Potatoes
  • Salt and pepper to taste

Instructions

  • Rinse the goat meat with water by adding lime or vinegar.
  • Season the goat meat with 1 tablespoon curry powder, allspice, bouillon powder (or all-purpose seasoning), salt, and black pepper to taste.
  • Put the instant pot in saute mode and add oil. Then add the goat meat and brown them on all sides. This will take about 3 to 5 minutes on each side. You can work in batches. Transfer to a plate.
  • Add another tablespoon of oil into the instant pot. Add the tomato paste, onion, ginger, and garlic and allow them to release their aroma. About 3 minutes.
  • Stir in the goat meat, beef stock, green onion, thyme, the remaining curry powder (1 tablespoon), and scotch bonnet.
  • Close the instant pot and close the pressure valve. Then cook on high pressure for 30 minutes. . Allow to naturally release for 10 minutes, then release the remaining pressure.
  • Set the instant pot back to sauté mode, and stir in the potatoes. Let it cook for another 10 to 15 minutes. This will give enough time for the potatoes to cook through and also allow your curry goat to thicken. Cook a little longer for a thicker consistency.
  • Remove the scotch bonnet and serve with your desired side.
