Ingredients

  • 3 pounds Chicken wings
  • 1 cup onions diced
  • 3 green onion
  • ½ teaspoon ginger diced
  • 1 tablespoon brown Sugar
  • ½ teaspoon nutmeg
  • 1 teaspoon allspice
  • ½ teaspoon cinnamon
  • ¼ tablespoon thyme
  • ½ teaspoon garlic Powder
  • 1 habanero deseeded - you can add more if you like it hot
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 tablespoon cooking oil
  • 3 tablespoons soy sauce
  • ¼ cup orange juice

Instructions

  • Prepare the marinade by adding all the ingredients together (except the wings) in a blender and blend till smooth.
  • In a large bowl, pour ¾ of the marinade over the wings, then massage the marinade all over the wings. (don’t throw away the leftover marinade).
  • Cover with a lid or plastic wrap and put it in the fridge to marinate for 8 hours or leave overnight.
  • Line a baking pan with parchment paper, spray with cooking spray, arrange the wings in the pan, and brush with part of the remaining jerk marinade.
  • Put the wings in a 450°F preheated oven and cook for 45 to 50 minutes. Turn halfway through and rub with the jerk marinade. Serve with your favorite dipping sauce.
  • For a slightly charred finish, broil for the last 2-3 minutes, watching closely.
