Ingredients

  • 6 cups arugula fresh, washed, and dried
  • ½ cup cherry tomatoes halved
  • ¼ cup Parmesan cheese shaved
  • ¼ cup walnuts toasted, roughly chopped
  • ¼ cup raisins or dried cranberries

Dressing

  • ¼ cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • In a large salad bowl, combine the arugula, cherry tomatoes, shaved Parmesan cheese, toasted walnuts, and dried cranberries.
  • In a separate small bowl or jar, whisk together the extra virgin olive oil, balsamic vinegar, lemon juice, honey, Dijon mustard, salt, and pepper. Taste and adjust the seasoning if necessary.
