Ingredients

  • 2 sweet potatoes medium-sized, about 1-½ pounds, [cooked and mashed]
  • ½ cup butter softened
  • ½ cup white sugar
  • ½ cup milk
  • 2 eggs large size
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 9 inch unbaked pie crust

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place the mashed sweet potatoes and butter into a large mixing bowl, then mix well with an electric mixer.
  • Add the sugar, milk, eggs, nutmeg, cinnamon, and vanilla extract; mix on medium speed until smooth.
  • Pour filling into unbaked pie crust and bake until a knife inserted in the center of the pie comes out clean - about 55 to 60 minutes
  • Remove from the oven and let cool completely before serving.
