Hi Pinky, eggs can be substituted in some recipes. Which of the recipes, in particular, are you talking about?

Hi Lola! I wish I had found my way to you 6 months ago. The theatre where my wife and daughter work is performing 'Death and the King's Horseman's. They tried to offer food to the cast and crew and researched as best they could for information on Nigerian cuisine, but frankly we couldn't find much. So they Did the best they could. Wendy and Jessica work in The Green Room at the Stratford Festival, in Stratford, Ontario, Canada and the play runs until the end of this month. Jessica has met several of the cast because they come for food almost daily and declares them "to be lovely people". Enjoy reading your blog and looking forward to trying several recipes. Take care! thom

So happy to read from you, Thom Seguin. Jessica and Wendy must have done a great job at the theater. Nigerians are lovely people; it is just unfortunate that you couldn't find much about Nigerian cuisine. Anyways, I have a round-up on it now. - Check here I am hoping Wendy and Jessica try more of these delicious recipes and will write back to give feedback on them. I am looking forward to their feedback. Thank you for taking your time here. My love to your wife and daughter too.
