How do you test to see if the oil is hot enough

You can dip the handle of a wooden spoon into the oil. If the oil starts steadily bubbling, then the oil is hot enough for frying. If the oil bubbles very vigorously, the oil is too hot and needs to cool off a touch. If very few bubbles pop up, then it’s not hot enough. I hope this helps..

I am not sure that you can help me- I am a home baker-i do a lot of sourdough baking-I suspect that if I tried I could come up with a reasonable diy recipe. I am down visiting my daughter, son-in-law and glorious grand daughter.I recently picked up Philly muffins at Whole Foods- I live on Martha's Vineyard- and hoped to be given some hint/help in making these at home-
2 years ago while in quarantine taking care of my son(He had covid-he did do well thanks to my home baking) I made sourdough English muffins-so I think I could work to cobble a recipe together.but would love if there is one that is already published/written down if you could send advice to me

Hi, Chef Lola I was searching for gluten free bread receipe with few ingredients, I came across to your site and was going to print out the rice bread.Wow, injera!? I am so impressed and easy to follow your injera receipe. I am Ethiopian, never learned how to cook, left the country many years ago. I have tried many other but I failed it. I am going to use your method, it’s put so well and easy to follow. I am curious to know where you learned how to make the “injera”, am very impressed!
