Ingredients

Tuscan Chicken

  • ½ cup all-purpose flour
  • 1 teaspoon oregano or thyme
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 3 chicken breasts large, boneless, and skinless sliced lengthwise into 6 thin cutlets
  • 2 tablespoons olive oil

For The Cream Sauce

  • 1 tablespoon olive oil
  • 1 onion diced
  • 3/4 cup sundried tomatoes chopped
  • 4 cloves garlic minced
  • ¼ cup chicken stock water, or dry white wine
  • 1 cup heavy cream
  • 1 teaspoon Dijon mustard
  • ½ teaspoon oregano or thyme
  • 1 teaspoon paprika
  • 3 cups baby spinach packed cups
  • ½ cup parmesan cheese grated
  • Salt and pepper to taste

Instructions

Chicken:

  • Combine the flour, oregano, paprika, garlic powder, salt, and black pepper in a wide shallow bowl.
  • Season the chicken cutlets with a bit of salt and pepper. Then dredge in the flour mixture, shaking off any excess.
  • Heat the oil over medium heat in a large skillet. Add chicken to the hot pan. You may need to work in batches to avoid overcrowding.
  • Cook the chicken for 4-5 minutes on each side until golden brown and cooked to a temperature of 165°F/74°C. Remove chicken to a plate, and set aside.

Sauce:

  • In the same skillet, add another tablespoon of olive over medium heat. Add the diced onion and cook until softened—about 3 minutes.
  • Add the chopped sundried tomatoes and cook for 1 minute, stirring gently, until the garlic is fragrant.
  • Add the chicken stock or white wine, and deglaze the pan by scraping any bits stuck to the bottom with a wooden spoon.
  • Turn the heat to medium-low, and add the heavy cream, Dijon mustard, oregano, paprika, spinach, and parmesan cheese to the skillet. Stir together, and bring to a simmer to thicken. Adjust seasoning salt and pepper) if necessary. Add a splash of water if too thick)
  • Place the chicken back in the sauce, spoon the sauce over the chicken, and cook until heated through about 5 minutes.
  • Garnish with fresh parsley if desired—pairs perfectly well with pasta, rice, potatoes, or steamed vegetables.
