Boiling chicken vs Poaching chicken?

Boiling chicken and poaching chicken are different. The major difference comes from the cooking method and temperature.

With boiling, the chicken cooks in rapidly boiling water. Poaching, on the other hand, requires a gentler method. The chicken cooks at a low temperature, allowing it to simmer and retain moisture.

This gentle, low-temperature cooking method results in tender and juicy chicken.

  • Black pepper (optional): I like adding this at the end for a little warmth without overpowering the chicken.

  • lb skinless boneless chicken breast or chicken thighs
  • 3 garlic cloves grated or finely minced
  • 1 shallot peeled and quartered
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • 1-1½ teaspoon salt or add to taste
  • ½ teaspoon black pepper or add to taste
  • water or chicken or vegetable stock or broth (enough to cover the chicken)

  • Remove the chicken from the liquid and let it rest for a few minutes before slicing or shredding.
