What is Cauliflower Steak?

Cauliflower steak refers to thick slices cut from the center of a cauliflower head, then roasted, grilled, or pan-seared until tender and caramelized.

Despite the name, it doesn’t contain meat. The “steak” refers to the shape and hearty presentation. It makes cauliflower feel like a filling main dish, not just a vegetable side.

Cauliflower is incredibly versatile in the kitchen. It can be made into various creative meals. For example, if you enjoy creamy vegetable sides, you might also love this mashed cauliflower recipe, which turns cauliflower into a smooth, buttery dish like mashed potatoes.

If you prefer something crispier, air fryer cauliflower is another great option. It’s quick, golden, and perfect for busy weeknight meals.

How to make Cauliflower Steak in 30 minutes

  • Cut the cauliflower into steaks. Check notes on how to cut cauliflower without falling apart.
  • Line a baking sheet with parchment paper and preheat your oven to 400°F (200°C).
  • Place the cauliflower steaks onto the lined baking sheet.
  • In a small mixing bowl, combine olive oil, garlic powder, onion powder, paprika, and lemon juice. Add salt and pepper to taste, then whisk until well combined.
  • Brush the seasoning mixture generously on both sides of each cauliflower steak.
  • Bake in the preheated oven for 15 minutes. Remove from the oven, brush both sides again with the remaining seasoning mixture, and flip each steak. Bake for another 15 minutes, until golden and tender. That’s it. No overthinking.

How to Choose Cauliflower

  • Get a firm, fresh head of cauliflower with tight, compact florets for better results.
  • Fresh cauliflower is usually creamy white or vibrant if it’s a colored type like purple or orange.
  • Avoid heads with lots of brown spots or discoloration. Feel the weight. It should feel heavy and full, not dried out.
  • It should have bright green, crisp leaves wrapping around the head, not wilted or yellow leaves.
  • Lastly, smell it. It should have a mild, fresh smell. A strong or funky odor could mean it’s starting to spoil.

Cleaning Cauliflower

  • Remove the outer leaves and trim the stem.
  • Rinse the cauliflower head under running water to remove dirt or debris.
  • Then, cut it into steaks.

How to cut cauliflower for steaks without falling apart

Cauliflower can easily fall apart during cutting. To avoid this:

  1. Remove the outer leaves.
  2. Trim the bottom stem slightly, but keep the core intact.
  3. Slice straight down through the center into thick slices (about ¾ to 1 inch thick).

The core helps hold the steak together. Always cut from the center outward for the best results.

This thickness will allow the cauliflower to cook evenly and develop a crispy, caramelized exterior while remaining tender on the inside.

If the cauliflower is sliced into too thin steaks, they may cook too quickly and end up being overdone, while steaks that are cut too thick may cook unevenly and have a texture that is too chewy or tough.

Tips

These tips help achieve that perfect roasted texture.

  • Slice the cauliflower evenly into thick slabs so that they cook evenly and hold together.
  • Brush the cauliflower with oil to help with crispiness and browning.
  • Use high heat to encourage caramelization
  • Flip gently to prevent breaking
  • Don’t overcrowd the pan
  • Once the steaks are tender and lightly browned, remove them because overcooking can make them mushy and lose their flavor.
  • Allow the roasted cauliflower to rest briefly before serving to retain moisture and flavor.

Frequently Asked Questions

Is cauliflower steak vegan?

Yes, cauliflower steak is a vegan dish made entirely from plant-based ingredients.

Can I boil the cauliflower steaks before roasting?

Boiling is not recommended because it can make the cauliflower too soft and watery and cause it to lose some of its nutrients. Instead, I recommend that you roast the cauliflower steaks directly without boiling them first. This will help to retain the cauliflower's texture and flavor and result in a more evenly cooked and flavorful dish.

Why is cauliflower steak called steak?

Cauliflower steak is called "steak" because when sliced into thick pieces and roasted, cauliflower can have a similar texture to meat, making it a popular vegetarian alternative to steak.

Does cauliflower steak taste good?

Yes, cauliflower steak can taste really good when cooked properly with the right seasonings and preparation techniques. Cauliflower has a subtle, almost nutty taste that can be combined with different spices and sauces.

How Long Do Cauliflower Steaks Keep in the Fridge?

If you store cauliflower steaks properly, they can last up to 4-5 days in the fridge. Place them in an airtight container or wrap them tightly in plastic wrap. This will help prevent water from getting in and causing the cauliflower to spoil.

Can I make cauliflower steak in the air fryer?

Absolutely. Cook at 375°F for 12–15 minutes, flipping halfway

Storage and Reheating

To store leftover cauliflower steaks, let them cool to room temperature, then store them in an airtight container or tightly wrapped in plastic wrap for up to 4-5 days. You can also freeze cauliflower steak for up to 3 months.

Reheating leftover cauliflower steaks can cause them to lose their texture and flavor. They may also not be as crispy or tender as when they were freshly cooked. Nevertheless, you can place them in the oven or on the stovetop for a few minutes until warmed through.
