Best pumpkin to use for pumpkin soup 

Butternut pumpkin is the best choice of pumpkin to use for pumpkin soup. However, you can also try other varieties of pumpkin and winter squash, such as sugar pumpkins and kabocha squash. Additionally, canned pureed pumpkin can be used as an alternative.

Ingredients for making pumpkin soup

  • Pumpkin: This is the main ingredient in pumpkin soup. It provides a smooth, creamy texture and a sweet, earthy flavor.
  • Onions & Garlic: These add extra flavors to this recipe, giving it a savory and impressive taste. 
  • Vegetable or chicken Stock: Don’t skip this if you want a burst of flavor with your soup.
  • Olive Oil: For sautéing the garlic and onions,  adding a mild and fruity flavor to the dish.
  • Salt and Pepper to Taste
  • Optional: Pumpkin Pie Spice (all you need is a pinch)

Tips

  1. Roast Fresh Pumpkin for Extra Flavor: Roasting caramelizes the natural sugars, adding depth to the soup.
  2. Don’t over blend: Blend until just smooth to avoid a gluey texture.

Storing pumpkin soup 

  • Store: Pumpkin soup can be stored in the fridge for up to four days!
  • Freeze: Pumpkin soup can be frozen for up to three months. If you plan to freeze your pumpkin soup, I recommend that you omit dairy for better results.
  • Reheat: Reheat pumpkin soup on the stovetop or in the microwave. To reheat on the stovetop, simply heat the soup over medium heat until it is hot.
  • To reheat in the microwave, transfer the soup to a microwave-safe container and heat in 30-second intervals, stirring between each interval until the soup is hot. If the soup is too thick, add in water or stock when reheating to make it as desired.

  • Bread: Serve with crusty baguettes, garlic bread, or homemade focaccia for dipping.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onions chopped
  • 3 cloves garlic Chopped
  • 1 pinch pumpkin pie spice
  • 1 medium pumpkin About 3lb or approx. peeled and cubed
  • 1 quart broth vegetable or chicken. Approx. 4 cups or 960ml
  • salt and pepper to taste
  • heavy cream optional: for garnish

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions and sauté until the onions are translucent. About 3 minutes.
  • Add the minced garlic and pumpkin pie spice (if using) to the pot. Cook for another 30 seconds.
  •  Add the pumpkin, salt, black pepper, and three cups of stock. Mix well,
    bring the mixture to a boil, and then reduce the heat to low. Allow the soup to simmer for about 30 to 40 minutes or until the pumpkin is soft and tender.
  • Carefully remove the bay leaves and cinnamon stick from the pot.
  • Use an immersion blender or carefully transfer to a regular blender (in smaller batches) to blend the soup until it's smooth and velvety.
  • Rturn it to the pot if using a regular blender. Add more broth if needed and adjust the seasoning to taste.
  • Serve and garnish as desired
